Wheat malt is an essential ingredient in brewing summertime classics such as a simple wheat beer, hefeweizen, and Kolsch. This grain affects the final product’s colour very minimally and adds robust sweet malty flavours such as biscuit, caramel and toffee. Improved head retention and a fuller body can be expected with the use of pale wheat malt. However, keep in mind that using too much pale wheat can result in stuck sparges due to the thickness. It is recommended to only go up to 80% of the total grist with this malt.
